Feijoa and Apple Crumble

Fruit Base
2 apples, peeled and sliced
12 ripe feijoas, peeled and sliced
¼ cup of sugar

½ cup flour
½ cup rolled oats
½ cup ground almonds
½ cup brown sugar
1 tsp ground ginger
150g cold butter, diced

  1. In a bowl, combine flour, oats, ground almonds, brown sugar and ground ginger. Rub in the butter until the mixture is clinging together in clumps.
  2. Mix the sliced fruit with the sugar. Place the fruit in a baking dish or individual cocottes. The fruit should fill ¾ of the dish. Sprinkle crumble over the top of the fruit.
  3. Bake in a preheated oven at 180oC for 35-40 minutes until fruit is cooked (fruit juices start to bubble up through the crumble) and crumble is crisp and golden. Enjoy with fresh cream, custard or ice cream.
