Fruit Base
2 apples, peeled and sliced
12 ripe feijoas, peeled and sliced
¼ cup of sugar
Crumble
½ cup flour
½ cup rolled oats
½ cup ground almonds
½ cup brown sugar
1 tsp ground ginger
150g cold butter, diced
- In a bowl, combine flour, oats, ground almonds, brown sugar and ground ginger. Rub in the butter until the mixture is clinging together in clumps.
- Mix the sliced fruit with the sugar. Place the fruit in a baking dish or individual cocottes. The fruit should fill ¾ of the dish. Sprinkle crumble over the top of the fruit.
- Bake in a preheated oven at 180oC for 35-40 minutes until fruit is cooked (fruit juices start to bubble up through the crumble) and crumble is crisp and golden. Enjoy with fresh cream, custard or ice cream.
